Yes. And props to you for keeping to the story you wanted to tell.
I also read Dean as straight, but would be willing to point to canon "evidence" of it. Shalln't, on accounta that's not what you're after. And yes, more-canon-could-change-that-opinion. Part of the evidence would be the different ways he treats men and women. I tend to disagree about Tess - I thought the chemistry distinctly cooled once Dean found out she was a Reaper. YMMV, and *shrugs*.
I'm not sure if I have an opinion on sex vs women. I haven't seen Dean look for the company of women just to hang out with, though, so maybe if forced into an opinion I would call his escape "sex with women". (Beer, music and food being the other forms that come easily to mind.) But yes, Dean *thinks* he's the aggressor in this situation, thinks he's safe, thinks he's in charge.
As for #2 - not sure I have anything to add to that, except *nod*.
